Gas/digestive issues and sleep

My 10-week-Old has been fighting severe gas since we brought him home. He screams and cries terribly when he passes gas and this happens on and off for about 30 minutes to an hour until he finally poops. We have no problem laying him in his crib to sleep, but he always wakes up 30 minutes later with gas pains and wants to be held.

Is there anything we can do? We’ve tried probiotics, gas drops and the Windy, but all of those only help a little. I’ve also been off dairy for over a month. Our pediatrician tells us it will take time for his digestive system to mature. But it kills me to see him in so much pain and sleep has been a real problem. Any advice?
