PCOS diet??

I was recently diagnosed with PCOS after an ultrasound and I do not want to take metformin or any kind of birth control because I want to treat it naturally. Currently, I am eating a vegan diet that is around 60% carbs, 20% fat and 20% protein and eating around 2000 calories. I thought I ate healthily as I consume fruits, vegetables, sweet potato fries and vegan proteins on the daily but I'm now learning that a 60% carb diet could be causing the severity of my PCOS and I have read case studies that imply that the only way to treat PCOS naturally is to eat a high protein, high healthy fat, low to no carb diet that is completely unprocessed. Problem with this is... I'm vegan and carbs are a huge part of my life as I consume lots of my calories from fruits, veggies, brown rice and sweet potato fries. I have struggled so much over the past couple of days trying to eat in such a way that is recommended (low to no carb) and have been nowhere near the calories that I need (this is especially important to me as I am recovering from an eating disorder). I was just wondering what diets any ladies with PCOS follow that have helped their symptoms through regulating their period (I do not have one atm and have not had one in 6 months) and helping them deal with PCOS without medication or birth control as I cannot seem to cope with a low carb diet!
