The photo isn’t very appetizing, but it was absolutely delicious.

Dinner tonight was made from the stuff we needed to use up.

Pan con tomate: Oven toasted sourdough bread, with roasted garlic (roasted with skins on, then peeled afterward), mashed in EVOO, and then spread on the bread. Then roasted vine tomatoes smashed and spread on that.

Broccoli rabe: Blanched and then sautéed with lemon juice, garlic and spring red onion.

Roasted squashes: Zucchini, eggplant, summer squash, paprika, salt + pepper
