Little vegan cupcakes 🙈

Ingredients; - 110g self raising flour
- 110 g caster sugar
- 110 g vegan butter
- 150 ml soy milk
- 1/2 tsp apple cider vinegar
- 1 tsp van extract
- 1/2 tso baking powder
Buttercream;
- 125 g vegan butter
-5 tbsp cocoa powder
- 250 g icing sugar
Plus vegan cream ---------------------------------------------------------------
Method;
- Heat oven to 180° and line a muffin tray
- Beat the butter and sugar with a mixer. Whisk in van extract and soy milk, alternating between milk and spoons of flour, until well combined and thick.
- Fold in any remaining flour, baking powder and pinch of salt.
- Pour into cupcake cases, and bake for 20 to 25 mins.

- Beat butter, cocoa powder and icing sugar until desired consitency. Leave in the fridge until cupcakes are ready.
- I also mixed some icing sugar and vegan cream together! ----
When cupcakes have cooled, cut in half, spread layer of cream in the middle, and pipe some of the chocolate buttercream on top!
