My mans hobby is ballroom and hip hop dancing.. And I don't dance but he picks going out to do that over spending time with me?

Why don't you join him?  There is nothing wrong with a hobby, in fact it is very healthy, and he should be allowed to do it.  If you are feeling left out you should join him.  If you won't I suggest you find a hobby of your own.

Even if you don't participate, couldn't you just go to watch? Even better...have him teach you?

I don't think you should be upset. I wouldn't. 
I would go crazy if my SO spent ALL his free time with me. Some of it is spent with me, and some of it is playing drums and stuff. I don't think that's him "choosing it over me." There's nothing wrong with a hobby! You can go out and find your own :)

Ok, as probably the only ballroom dancer who is going to answer you, you are overreacting. Dancing is all-encompassing for people who really love it. Ballroom especially. I don't know what kind of ballroom he does - collegiate, chain studio, independent studio. But he might feel like you won't understand and that you'd be overwhelmed. I worried that my SO would be jealous of my partners and annoyed that I had a skill he couldn't do. But I found a style I don't know well (west coast swing), so we could go together and both be new at it, and he could understand why I'm so into dancing. You could do something like that, with wcs, blues dancing, argentine tango. 
 
Dancing might be an escape from his life, and he worries about taking care of you and making sure that you have a good time if you go with him, instead of being able to lose himself and relax. You'll never know until you ask.

As a ballroom dancer I can tell you that it is addictive! I am sure he would be thrilled if you showed an interest. My hubby likes watching my competitions and we get a kick out of me trying to teach him. He is not great but it gives us some bonding time and a good laugh. :-)
