Seriously need some advice. Help!!

Alright guys. I need some help with something. I am a non religious man. Technically I am catholic but don't follow it at all. I have been dating the love of my life for 4 years. She is a Jewish women. As our relationship started to get serious I found myself interested in judaism. I want to convert and I'm currently speaking to a rabbi. So my The story is that I have told my SO that I was going to convert a long time ago but I lied about the whole thing. I said I was but I truly wasn't. I wasn't emotionally ready and I was afraid. 2 years later I honestly started to get into it. As I said I am currently speaking to a rabbi by phone. That's all he wi give me for now. But my girlfriend doesn't believe I speak to him due to the fact that I lied in the past. I totally understand her. But I want to show her that I am serious about this. I know my track record doesn't prove it but I am truly serious about this. They can't really speak to each other due to religious aspects. But I want to show her another way. I'm supposed to attend a Jewish seminar in the up coming weeks. And for anyone who is going to say why are you doing this for her please stop. This is for myself as well as her I want to live a happy peaceful life with someone who I want to be my wife. Please no rude comments about Judaism and how it may or may not be a bad religion. I will defend what I believe in. All I want to do is prove this to her. She the best thing that's ever walked into my life. This is very important to me. Thanks in advance for everyone who may help.
