Weight gain...also, I go to a breastfeeding support group twice a week and they weigh baby before and after feelings. This will show you how much baby transferred. While your feeding, listen for lots of swallowing, if baby burps that's a good indication of a full belly, also is baby satisfied? Or are they still showing feeding question after a feeding.

By the amount of nappies they go through, they should have wet nappies atleast every couple hrs, not only that but baby should seem happy and satisfied to go atleast 1-2 hours between feeds at the start

How often a baby nurses is not a good indication of your supply- my daughter nursed every 15-45 minutes for the first couple of months and would sometimes take an hour to finish nursing. She had plenty of wet and poop diapers and was growing very well. That's all you really need to watch- growth and diapers.
