Food for camping

Hello everyone,

I am planning on going camping for 2 weeks in about a month. While I am not fully vegan or vegetarian yet, my husband and I are working on eating less meat and trying to focus on vegan and vegetarian meals. Unfortunately my husband and I do not like mushrooms or bell peppers. But we love nuts, beans, quinoa, and most other fruits and vegetables.

Does anyone have any suggestions on food they would bring camping?

Some examples of what I brought last time (2 years ago before I started changing my diet):

Soups and chili

Sandwich materials

S’mores material

Trail mix and jerky for hiking

Since I am cutting down meat I was thinking:

Minestrone soup and meatless chili

Nuts and fruits for hiking

I am unsure what to bring as a “meal” instead of sandwiches for longer hikes and car ride stops.

I appreciate all your help and support on my path to this lifestyle.

Edit: I should add that this will be tent camping and we will not have any electric hookups. For most dinners I can have a campfire and I will bring an ice lined cooler for refrigerated food. We will be stopping and multiple locations and will have options to stop at grocery stores along the way at least every 4-5 days.
