Thinking about making ceviche today and was wondering if imitation crab was safe to eat?

Might just wanna research the type of fish it's made from I know some are made with cod or something like that but it maybe made with a fish with high levels of Mercury and that can affect baby's brain that's why they tell ya to stay away from tuna
