These molasses cookies are super chewy and cinnamon-y and full of other good spices! They’re good to eat for the holidays.

1/2 inch thick cutout sugar cookies. 
2C sugar 
2C butter, room temp 
4 eggs 
6 yolks 
2 tablespoons of your chosen extract (vanilla, coconut, almond, etc.) 
7C flour
1/2 teaspoon salt
Preheat oven to 375
Cream the butter and sugar. Add the eggs and yolks 1 or 2 at a time, thoroughly mixing between eggs. Mix in extract. 
Combine the flour and salt and stir slowly into the wet ingredients. (If you add it all at once it’ll go everywhere) 
Once combined, wrap in plastic and chill in the fridge for an hour. This is important because if you work with warm dough, it’ll stick to everything and your cookies will not hold their shape in the oven. 
Take a 1/3 of the dough out, and roll it between sheets of parchment paper until it’s 1/2 inch thick. Don’t use any extra flour. 
Once you’ve cut out the shapes you want, stick them back in the fridge for a few minutes (I do maybe 10) to get nice and cold. You can repeat the process with the rest of the dough while you wait. 
Bake the cookies for around 8 minutes. Keep an eye on them, and as soon as you see any hint of brown around the edges, pull them out. I time the first one and just based on that in the future. Since every oven is different. 
Cool. They can hang out on the counter or in the fridge. Decorate with royal icing, and let the icing dry overnight.

Maple pecan cookies
3 cups all purpose flour
1 tbsp cornstarch
1/2 tsp baking soda
1/2 tsp salt
1 tsp vanilla extract
1 cup unsalted butter, softened 
1 cup brown sugar
1/3 cup real maple syrup, grade A or B
1 egg
1/2 cup finely chopped pecans
1 cup whole pecan halves
Preheat oven to 350° F
Cream together butter and sugar, when well mixed add maple syrup, then vanilla and egg. In a separate bowl combine flour, cornstarch, baking soda, and salt. Once egg is well incorporated with butter and sugar mixture, add flour half at a time, mixing well after each addition. Stir in chopped pecans. 
Drop by tablespoonfuls on parchment lined baking sheet and press a pecan half in the middle of each. Bake for 10-12 minutes.
