Fasting but not wanting to lose weight (Orthodox Christian)

So I am 17 and decided to fast for my first time. This is the most strict fasting period for my religion (Easter Fasting). We are not allowed to eat meat, fish, cheese, milk or eggs, alcohol and also every Wednesday and Friday we are not allowed to consume any type of oil.

I can totally handle this diet. I love veggies and fruits compared to meat. And this is my chance to switch to a healthier lifestyle eg. switch from regular cow milk to coco milk.

The problem is that I am already at the boundary of being underweight, and I’m scared that with this diet I will lose a lot of weight and become officially underweight while I am striving to gain weight.

What can I eat that I’m allowed in order to gain sufficient calories that will help me gain or maintain my weight?
