Getting the news that my little girl has mspi (milk, soy protein intolerance) has been a challenge for me. Having to eliminate everything that I love eating in order to help her and so I can still breastfeed hasn’t been the easiest task. From starting an elimination diet to slowly being able to add in food was and still is hard. I was hungry and always thought is this worth it? Well the easy answer is yes, it is soo worth it! So now, what in the heck do it eat! Never would I have thought I would be the lady in the grocery store checking every label to make sure there is no dairy or soy (harder than it sounds). But tonight I finally conquered a milestone. I made a delicious dairy, soy and gluten free meal! Clinatro-lime chicken thighs with avocado-tomato salsa. I owe it all the Mealime app!
