Trying to find some new vegtable recipes and encourage myself to eat healthier... I have vegetables at least every night with lunch and dinner but I'm feeling blah about them. Usually my go-to is roasted broccoli with balsamic vinegar, roasted green beans with S&P, salads with various lettuce and raw broccoli and that's pretty much it. I'll cook up the occasional corn on the cob or carrots, throw some bell peppers in with sandwich wraps or potatoes...sometimes brussel sprouts but I need some more variety! What are your go-to vegtable, how do you cook them and please share any recipes!
