Roasted lemon pepper chicken
Wish I would have got a picture after it was cooked, but busy filling plates 😂
425° covered for 1 3/4 - 2 hours
X1 large lemon
X5 medium potatoes
X6 stickers of celery
X large handful of baby carrots
X3 Garlic cloves
X 1/2 - 1 whole white or yellow (little sweet if preferred) onion
Lemon pepper
Garlic salt
Italian seasoning
Pepper
Lemon zest
Shred some lemon zest either over chicken or into a small bowl/container.
In large bowl place all chopped and sliced vegetables. Squeeze half the lemon over and season with all the seasonings. Mix tell all is covered and evenly seasoned.
Take second half of lemon and squeeze over the outside of the chicken. Place both squeezed lemon halves into the baking tray (preferably touching the chicken)
Stuff as much vegetables as possible inside of the chicken, and with whatever is left of the vegetables; fill the sides and rest of the surface area of the baking tray.
Season the outside of the chicken with all the seasonings and lemon zest if not already done.
