What is your go-to quick and easy dinner?

My husband and I have done an awesome job actually cooking a healthy dinner this week for ourselves and our daughter (huge accomplishment for us). We are trying to eat more healthy options, instead of fatty packed, processed food. In the past week we’ve had:

Steaks

Spaghetti

Pork chops

Meatloaf

Salmon fillet

Tilapia

Homemade chicken enchiladas

We are at a loss as to what to cook tonight! We are looking for something quick and easy, yet healthy for tonight. Neither of us are huge into chicken recipes, and we’re burnt out on fish choices. What is your go-to quick and easy dinner ideas??
