Homemade chicken pot pie!

I came up with my own recipe for chicken pot pie several years ago and it’s still one of my favorites! It’s easily adaptable but here’s roughly what I do:

6 oz carrots chopped (or baby carrots)

6 oz green peas

1 medium onion

3-4 chicken breast tenders (one large chicken breast would probably work too)

One can condensed cream of mushroom soup

Pie crusts (use your favorite recipe or refrigerated pie crusts work great too!)

For individual pies I make 6 in the ramekins I have and need the dough amount for about 3 full size pie crusts to line them all with top and bottom crusts. Your size may be slightly different since these are not standard mini pie pans. It could also be made as one full size pie and could be made with only a top crust if you want to cut back on the crust amount. We like pie crust in my house :)

Cook the chicken in a small amount of chicken broth on the stove until cooked through. I use a large skillet with maybe a half inch depth of broth and keep it on a low simmer. You can cook the peas separate or just add them to this broth with the chicken when it’s done and continue cooking long enough for the peas to cook, which doesn’t take long at all.

While the chicken cooks, steam your carrots (or boil if you don’t have a steamer) and sauté the onion (chopped into bite size pieces. When the chicken finishes cooking, remove it from the broth and shred with two forks.

In a large bowl, combine the shredded chicken, peas, carrots, onions, and the cream of mushroom soup (do not add the water like you would to make soup). Add some of the broth from cooking the chicken if it seems too thick. Add cornstarch if you want it thicker. Let this filling sit while you preheat the oven to 400 Fahrenheit and line your pie pan/ramekins with crust. Fill your pie(s) and add top crust. Seal the edges of the crust and then cut a few slits in the top to allow steam to escape while cooking.

Bake at 400 F for 30-40 minutes until crust is golden and filling is bubbling through the slits. Let it cool before digging in because it will be hot!
