Sweet Polenta Cornbread

Regardless of any culinary education I have, Jiffy Cornbread in the fifty cent box will forever be my favorite due to childhood nostalgia, but due to the current quarantine situation I couldn't find it anywhere. I had a bag of Bob's Red Mill Polenta/Corn Grits and some baking essentials and thought well "this will have to do".

After many recipes tried and many failed, I finally came up with what is giving me sweet, fluffy, Jiffy feels. Now, i'm obsessed and probably make this cornbread every other week.
