Since everything's closed for quarantine, Rian and I decided to make my favourite vegan friendly cake for my birthday🌻🎂🍰
Not my finest work as i was on a tight schedule, and i didn't make enough mixture for 3 sponges 🙈
---------------------------------------------------------------------------- -Ingredients
- 175 g flour
- 25g cornflour
- 50g caster sugar
- 50g light brown sugar
- 200 mls of soy milk
- 5 tbsp cocoa powder
- 5 tbsp rapeseed oil
- 2 tsp apple cider vinegar - 1tsp baking powder + soda - 350 g canned cherries
- 50 g caster sugar - 30 g cornflour - 500 mls plant based cream
- tsp van extract
- 50 g icing sugar ----------------------------------------------------------------------------- Method - Mix flour, cornflour, baking powder, sugar and cocoa in a bowl.
- Add the oil and milk to the dry ingredients and whisk to combine. Then add the apple cider vinegar and tbe baking soda.
- Pour into a baking tin and bake on gas mark 4 for 20 - 25 mins.
- Leave to cool completly and cut into 3 even slices - Drain the cherries and collect the juice.
- Stir 2 - 3 tbsp of juice with sugar and cornflour. Bring the remaining cherry juice to the boil in a pot.
- Add the mixture to the juice while stirring constantly. - Remove from the heat and leave cool, fold in the cherries. - Whip the cream and the icing sugar together until thick.
