Does this sound healthy?

Hey y’all I’ve been vegetarian for almost 3 months now, but I caught mono and pneumonia something around late June so I haven’t been eating very healthy. I planned on making a fruit smoothie for breakfast with almond and cashew milk(10 grams of protein), banana, oranges, mango, flaxseeds and pineapple. For lunch I wanted to do a cheese quesadilla with guacamole, grapes, plain mashed sweet potato, and popcorn. I choose two things for dinner one being tofu with broccoli and green beans in sesame sauce. The other chicken noodle soup without the chicken of course and I plan on putting chickpea noodles in that, veggie broth instead of water, veggie bouillon, onion, carrots, and I may put some tofu in that too. And since this isn’t enough calories I do have raisins and mixed nuts and plan on grabbing some other items for snacks. Also if this does sound good would it be a good idea to blend up the smoothie tomorrow and put it in a pitcher to save time every morning?
