Crockpot/stovetop/sheet pan dinner sharing post

Here’s what we regularly do already:
Stovetop: Tacos, spaghetti, fajita burritos/quesadillas, soups, breakfast for dinner, and various stir fry combos
Sheet pan: Shake and bake pork chops and a veggie and sliced smoked sausage and veggies
Crockpot: beef and veggie roasts, bbq chicken or pork for sandwiches, and chili
(Looking for some inspiration to get back to cooking after depleting my freezer stash post partum)
Here’s my favorite easy recipe:
We love crockpot chicken curry.
Chop 2 or 3 chicken breasts into bite sized pieces
Chop a bag of Yukon golf potatoes into quarters
Chop a bag of baby carrots into halves
Combine all with 2 jars of store bought yellow curry sauce (we like the Kroger one) and stir
Cook on low for 6-8 hours or high for 4 hours till chicken is fully cooked, stirring occasionally, serve over rice with salad.
