Those who have Gestational Diabetes, what does your daily menu look like?

I recently was diagnosed with gestational diabetes. I’m on my first day of monitoring, my nutritionist hasn’t contacted me yet so I’m not 100% sure how my meals should change. I decided to do my normal morning routine to see how it looks, which was a bowl of cereal and coffee with creamer, which of course caused a spike after I took my blood sugar an hour after. I was hoping someone might be able to answer a question in regards to coffee, do you drink it during the 1 hour before you take your blood sugar? Should I space it out? I love coffee and that’s something I really want to be able to work into my schedules.

Also what do your meals looks like? Dinner I normally eat very healthy, but breakfast and lunch get a little iffy, especially breakfast. What do you eat to keep your numbers low? Would whole wheat and almond butter be an ok one?
