New dishes

Chef Cara • Currently cook for a fine dining restaurant in Traverse City. Single, 29, chef, would love to be a mom someday.

Haven't posted any of my dishes in awhile but this is what I've been cooking up at the restaurant.

Also, today is my birthday. 31 years old🎂

I've been working on some new fall menu items. Lots of ideas. I'm super excited.

Halibut, sautéed spinach, mushroom risotto, and roasted tomato and garlic sauce. I needed a way to use up the tomatoes as they were getting way too soft so I roasted them with garlic and then blended with olive oil and basil and of course salt and pepper. I didn't want a heavy sauce.

This plate was for my staff to try but for service we scaled down the sauce by half

It's not the prettiest but it's my best flavor combination I've come up with.

Bourbon Bacon Apple Tart

Sautéed apples in bacon fat, folded into a bourbon reduction, bacon crumbles, stuffed into a puff pastry. Garnished with smokey caramel sauce, brulee apple slice, candied bacon ribbon and chantilly.

This dish was not overly sweet at all. It was like warm apple pie but with hints of smoky, sweet, tart. Everything came together nicely and it was a huge hit.
