Anything that is not non-stick. Those PFAS in the Teflon and non-stick pans are, arguably, one of the worst inventions ever. Not really arguably terrible but some might argue it isn’t the worst. 
We use all-clad and occasionally cast iron and stainless steel. Stopped using non-stick about 20 years ago. I wish everyone knew how terrible PFAS are.

Cast iron and stainless steel. The ceramic coated pans still have chemicals and toxins that seep into the food when cooking, especially at higher temps.
