~ Flourless Peanut Butter Muffins ~

Recipe yeilds 12 muffins

Ingredients:

🥜 2 spotted bananas

🥜 2 eggs 1 cup peanut butter

🥜 1/4 cup maple syrup or honey

🥜 1 tbsp vanilla extract

🥜 1/2 tsp baking soda

🥜 1/2 cup mini dark chocolate chips (optional)

Method:

1. Preheat the oven to 400°F and line a muffin tray with 12 paper cups or cooking spray.

2. To a large bowl, add the bananas and mash them with a fork. Add the eggs and mix well to combine.

3. Stir in the peanut butter together with maple syrup or honey, vanilla extract and baking soda.

4. Fold in the chocolate chips and divide the mixture among the prepared muffin cups.

5. Bake for 13-15 minutes, or until a toothpick inserted comes out clean.

6. Remove from the oven, transfer to a cooling rack to cool, and enjoy!

✨ ️Side Note:

These are perfect to meal prep for a quick breakfast before school! I double the batch, store them in the fridge, and pop 'em in the microwave for 30 seconds or less and serve with berries and/or boiled eggs also in the fridge prepped and ready to go! Or, simply serve alone as these muffins are nutrient-dense making them nice and filling- packed with protein, healthy fats, & natural sugars excluding the chocolate chips. I also use natural PB, just two ingredients- peanuts & salt. I bake them this way every time, and my kids love 'em! I hope your littles will as well 😊♥️
