You can ask the technician to write it down for you and you put it in an envelope and seal it. Give the envelope to someone that will make your gender reveal balloon, cake, however you're going about it.

You and your partner can know only or you can have a friend/family find out only or you can have the technician write it down or place the gender photo in an envelope and seal it! It's all up to you.
