Parents struggling with my interracial relationship?

I'm Chinese and my boyfriend is black, my parents claim to be very open minded since my cousin married a black guy and has a mixed race daughter but they're still racist in the way that a lot of older people tend to be (making racist "jokes" perpetuating stereotypes etc). They claim to trust my judgment but still seem very uncomfortable whenever I mention him, they try to talk me out of it and I feel like I have to hide my relationship. How can I make this easier on them? They still have not met by the way as my parents live in CA and my boyfriend and I live in New York. Thanks in advance ladies!
