I've been thinking about raising meat rabbits, I love the taste of them and they're very profitable livestock. You can raise them (if you breed them) and only spend $1-$2 per rabbit on feed, sell the meat for as much as $8 per pound, when each rabbit weighs about 4-6 pounds. And you can sell their hides for as much as $10 each. So you're looking at as much as a $57 profit per rabbit, and a breeding pair can have several litters per year.

You need to consider the cost of a professional butcher and priory handling and packaging as well if your selling outside your household. I don't want to come off as a dream killer, I just feel like you missed some large costs and considerations.

I lived rural and people all the time tried to sell milk fresh from the utter and would always get shut down because they didn't pasteurize it among other things that made the milk safe to sell to the public. As a seller, you are responsible for customer health and I think it's a good idea, but you might still have some more research to do because you may find it's not as profitable as you think it will be when all the proper guidelines are followed.

I've had rabbit once. It was fine. Very mild. My concern with raising them is, is it really profitable enough to justify all of the effort that will go into it? I mean how long do you have to have them before you can butcher them? And don't you have to clean out cages or whatever? Or would you let them more or less free roam? I don't know much about rabbit raising. My dad raises pigs and wants to get into cattle but that's bigger livestock and a little less complex in my opinion.

My in laws served me rabbit before. It tastes like chicken to me. I don't like the ideal of eating a rabbit but it's no different than eating a pig or a chicken. 
Just start small. Will you have to process the meat yourself? I think it can be very challenging to "make money" with hobby farming. But I don't know your situation so if you think you can do it then go for it! 🐇

I've never had rabbit. The only odd meat I had before I went veggie was gator.
