My little girl is 3 months old, and I've been having a difficult time adjusting. I love her to death, but being honest, I miss my no-kids lifestyle. Ive become so cranky and angry and emotional because of it, and almost felt like I was slipping into PPD. so today, I put my foot down and decided that just cuz I'm a mom doesnt mean I have to stop being me! So I got up, showered, got dressed, did my makeup, put on some music and got busy in the kitchen! I looooove to cook, but I feel like I hadnt had time to do it right lately. Dinner has just been something thrown together and it was more of a rushed chore than something enjoyable. Welp, no more of that! We are eating GOOD tonight! Spanish chicken and rice with black bean and corn salsa, served with a (non-alcoholic) Watermelon Lime Refresher 😋 I feel so much better now! Just had to share!

Thank you all for such sweet words! It feels good knowing I'm not alone, and it does get easier 💕 as for the recipes, here ya go!

Mocktail: sprite, watermelon juice, and a sqeeze of lime. I've considered making it with coconut water, as well.

Black Bean Corn Salsa: 1 can of whole kernel corn (drained), 1 can black beans (drained and rinsed), 3 roma tomatoes diced, 1/2 an onion diced, 1/2 a lime sqeezed, 1 jalepeno, cilantro, 1 TBS olive oil, garlic, cumin, salt&pepper

Chicken: rubbed down with cumin, chili powder, salt&pepper. Cover in roasted tomatoes, onion, jalepeno, garlic, and cilantro. Squeeze 1 lime over the top and add 2 TBS of olive oil. Cover and let marinate for at least 8 hours, turning it every 2-4 hours. To cook: place it all in a pan and bake at 375°
