Which is formal and polite that you use?

What do you sign off with? I think it sets the tone for an email, but my friend doesn't see the point in it or why they're different form each other.

But it depends what it’s about 🤷‍♂️ I use whatever feels most suitable

When I email professors I usually use "thanks", if I'm feeling very formal or thanks doesn't seem appropriate I'll use "sincerely", with a friend I use a hyphen and then my name.

“Kind Regards” is my standard sign off. 
If someone annoys me, it’s just “Regards” or “Best”, and if it’s an email to a teammate, I use “Thanks” or even “Thanks!”

It really depends on who the email is to, and the contents and purpose of the email. Usually I just choose something to match the tone of the email. 
My boyfriend never uses them unless I proofread his emails and add one (I'm trying to teach him how to formally communicate properly 🙄)

Whatever feels right? I've sent emails with, "sincerely," and, "many thanks," and, "thank you," and, "thank you kindly," and, "respectfully," and whatever I feel is best to use given the content of the email, and who I'm emailing and whether it's personal, or business related.

This gives me business class flash backs 😂😂. From what I remember there’s a specific sign off for how well you know the person. If you don’t know the name of the person you’re sending to it’s “kind regards” and if you know their name it’s “sincerely”. I think that’s how I was. I’m not sure. I do know it involves whether you know the name of the recipient and how much of their name you know.
