Yummy yummy in my tummy π
This is so so yum and is affordable, easy and healthy.
Ingredients
Vegetables:
1x Purple Cabbage
4x Carrots
2x Zucchinis
1x Parsnip
1x Large Broccoli
4-5x Sticks of Celery
1x Onion
1x Capsicum

Seasoning:
- 2L of Chicken or Vegetable stock
- 1x cube of chicken or vegetable stock
- Salt
- Pepper
- Garlic
- Herbs [Rosemary, Thyme and Basil]

Method:
1. Chop all vegetables into preferred sizes.
2. Wash all vegetables.
3. Heat 1tbsp of Oil in a large pot.
4. Add all vegetables and cook over high heat for 5minutes.
5. Turn temperature down to Low heat.
6. Then add 2L of Chicken or Vegetable stock and crumble one cube of stock into the pot.
7. Add salt, pepper, garlic, herbs into pot and stir through.
8. Cook over low heat for approximately 15minutes.
9. Add 1 cup of rice and stir through.
10. Cook over low to medium heat for about 40-60minutes.
Cool and serve in bowl.
