Newly diagnosed with GD what I eat in a day

Hello everyone

I was diagnosed with GD at 27 weeks (last week) when I failed both my 1 hr and 3 hr glucose test. As my number were high, my doctor put me on Metformin 500mg two times a day. I have been watching what I eat.. specially carbs and checking my blood glucose levels four times a day. My OBGYN hasn’t referred me to any dietician/endo.I am using trail and error method to see what works for me. He gave me two weeks until my next app to figure out what works for me and to keep my levels in the normal range.So for breakfast wheat toast with omelette works well for me. For snacks carrots with ranch, string cheese, salad with ranch works well but when I eat any fruit my level spike high. I used to eat rice for my lunch and dinner before i was diagnosed now I completely stopped eating rice. For lunch and dinner veggie quesadillas with mushrooms, onions, spinach, broccoli, zucchini and squash or chicken quesadillas. I also have salad with ranch on the side. I have a cup of green tea in the evenings. Before bedtime I have a snack rich in protein like greek yogurt or cheese or peanut butter to keep my fasting levels in the normal range. As far as my knowledge fruits don’t work for me. Hope this post helps someone.
