Healthy carrot cake muffins with cream cheese frosting!

Hey guys so I made these amazing lightened up muffins today and I just had to share:

Makes 15 normal sized muffins

3 cups of grated carrot

2 + 1/4 cups of oat flour

1/2 cup sugar or stevia to taste

3 eggs

3/4 cup greek yogurt

3/4 tsp baking powder

1/2 tbsp cinnamon

1/2 tsp salt

Grated nutmeg

Vainilla/almond essence

Mix wet and dry ingredients separately and then combine. Bake at 350 for 35 minutes.

Frsosting:

3/4 cup Greek yogurt

1/2 cup low fat cream cheese

1.5 tbsp butter melted

1 tsp vainilla essence

Powdered sugar to taste

Just mix all that up, spread the creamy goodness on your muffins and top with almonds, coconut or whatever you like! They turned out very good, not too sweet and spiced the way I like them (I hate bland, overly sweet carrot cakes). Enjoy 😊
