Getting married advice

So there’s this guy I’ve known since my freshmen year in high school. We’ve dated on and off due to having to move and school issues. Well, we both want to get married and we both are very sure of it. I would like a handfasting marriage (I am pagan) but the area I live in is full of Christians and I’m not sure who to invite to a wedding because my family is baptist or Catholic. How do I ease them out of their traditional wedding beliefs? Should I just have a ceremony with only my fiancé? I can’t find a priest or priestess in my area as well. We both plan on getting a court marriage after as well.
