Peruvian Recipes?

This is a total long shot, but I’m hoping someone on here might know when I’m talking about.

When I was in college, I had a roommate who was Peruvian and the food she made was to die for! She made always made this chicken that was in a spicy orangeish/red sauce that was eaten over rice. I believe there may have been onions and some various vegetables possibly mixed in with it. Vague, I know 😂 Anyone have any idea what this might be?

I’d ask her myself, but have since lost contact with her since she deleted her social media. 😭
