I always add my veggies in when I first start my roast. My grandma puts the veggies in a few hours into cooking. I don't know how everyone else does it. Is there a right or wrong way or just preference?

I don't think there is a right or wrong way to do it. I think it's just however you like it or feel like doing it. Usually I'm busy so I add the veggie at the start so I don't have to worry about coming back later or remembering that I need to add them.
