Choosing a Last Name

My boyfriend and I have decided that we want to choose a last name for ourselves when we get married. The only problem is that I have no idea to what! I’m German by heritage but not super attached to my heritage. He’s Mexican and much more attached to his heritage but doesn’t want his dad’s last name. I’m torn between trying to find a meaningful name for us (and where to even start, I have no idea) and just finding a last name that suits both of us. What do you guys think?
