I have the same Doppler and mine does that as well with reading the heart rate.

Maybe the baby is moving so it's not detecting it on a consistent basis?

Try putting it one the #1 setting. Also depends how much sound it’s picking up. I know I hear mine plain as day but at 11 weeks the sound waves aren’t strong enough for it to pick up a solid reading yet.

You have a large vein running down your belly so it could be reading both your heartbeat and your baby’s

This early it can’t pick up the reading, but that is baby. To give a rough estimate on the heartbeat, set a timer for 15 seconds and count how many beats then multiply that by 4 and you should have around your beats per minute. I do this and I get somewhere between 150-160 every time.
