Because I’m pregnant and wanted pie... that’s why

Seriously, gestational diabetes can kiss my booty. I wanted pie, so I turned my favorite coconut cream pie diabetic friendly. Sugar free, gluten free crust, it’s so creamy and delicious and the crust is so flakey and tender you’d never guess it was made with sugar substitutes and no flour.

For those who may be curious...

My levels were only at 97 after a big slice of this masterpiece. This makes me a happy momma because it was amazing.
