SAHM back to work.

*Sorry in advance for possibly posting this in the wrong section!*
I've been a stay-at-home mom for a few years now, however, about 2 years ago, I got a job working at a preschool, I enjoyed it (other than the owner/my boss) and was really great at it! I loved the kids and they loved me! But one day my son, who attended the school as well, got super sick and I asked if I could leave work for the rest of the day to take care of my little guy. I stayed and waited for my co-worker to come in to relieve me....
My boss came in and was told what I'd requested. Her reply, "I'm so sick of this sh*t!!!!" (A lot of us girls/workers were constantly sick and couldn't come into work or had to leave early due to illness. The preschool had mold!)  Meanwhile, my sick son is laying on his mat right beneath this woman's feet, he's 5 years old and totally heard her foul language and witnessed her nasty behavior. 
Thankfully, I was allowed to leave with my sick baby. I immediately took him to the doctor where he was diagnosed with pneumonia!!!!! 
Freaking out and being absolutely disgusted with my boss and upset that my son had pneumonia from what I think was her nasty school, I called and quit that same day!! I know, I know, I shouldn't have quit without notice but I was absolutely appalled with my boss's behavior and didn't believe that was an appropriate environment for me and especially my 5 year old!! 
So, cut to the chase. I want to and need to go back to work and would love to work back in a preschool again. (Both my kids are older and in school now) I loved it, I have a lot of experience with children and it's something I'm great at! But I know I can't use that preschool I'd previously worked at as a reference. Before that, I hadn't worked in years. Last place I worked was at Clinique as an Associate Consultant. Back in 2005!
How should I go about creating a resume? I have such limited experience and the actual preschool experience I do have resulted me my quitting abruptly!! Help!!
