Gestational diabetes...

I don’t know why I got it I eat healthy and not too much but I failed my 1 hour glucose test at 209. So they won’t even attempt a 3 hour so as I’m waiting for a referral for a specialist I made a meal plan and I need opinions about the meal plan to see if it’ll help my blood sugar stay in check until my appointment.

Morning-

1/2 cup cooked oats

Plain low fat Greek yogurt

1/4 cup blueberries

Chia seeds sprinkled over the top

Lunch-

baby kale and spinach mix

Chopped onion,celery, tomatoes, mushrooms and grilled chicken with olive oil drizzled and some salt and pepper

Snack-

carrots and hummus

Dinner-

cauliflower “rice” garbanzo beans tomatoes onion mushrooms tofu and quinoa all sautéed together in olive oil.

Before bed snack-

Half an apple with organic peanut butter
