Can I eat beef jerky?

I’m craving beef jerky. I googled it. One website said it was fine another said to avoid it because it is dried and not fully cooked

Beef jerky is fully cooked. It must be dried at a temp of 165°. It would never keep if it was raw. Whatever website told you otherwise is ridiculous 🙄

I work for the USDA, and I personally inspect a number of jerky plants. It is absolutely fully cooked. These facilities have to monitor each batch and document the final temp, which is 161 F or higher. The product is ALSO considered dried, because the water activity (the amount of water available to microbes) is very low. A low water activity helps the product be shelf stable and helps inhibit many bacteria and fungi. 
Long story short, yes, jerky is pretty safe. There is a very very small chance of listeria. I have personally worked with a plant that had listeria positive product. But we caught it before it hit the market, and we suspended the plant’s production until the problem was resolved. We work really hard to make sure our food supply is safe. Stuff sneaks through, but again, it’s pretty rare.

I heard this too but it’s seriously one of the only meat products I have a craving for. I haven’t eaten it because of this being said! 🤷🏼‍♀️
