Any vegan bakers in the house?

I cant believe how easy it is!

I just substitute eggs for 1/4 cup of applesauce each, and butter for about 80% the amount of vegetable oil!

heres what ive made in the last couple weeks:

chocolate chip brownies! sooo perfectly gooey in the middle and crispy on the edges

pumpkin puree & pumpkin spice donuts ! in the fall mood

and a coffee cake (yes i make my coffee cake coffee flavored, and yes, thats extra coffee on top, i cant help it, its my favorite lol)
