The regular gestational diabetes test doesn't require any fasting. When I took it for my last pregnancy I just ate like normal before the test.
The 3 hr test requires you to fast for 8hrs before.

You have to fast with the 2 hour or 3 hour test, not the 1 hour test.

Check with your OB. Mine recommends a small high protein low card breakfast. Some require you to fast. Seems every OB is different.
