Cheap and easy meal ideas for dinner?

I want to cook more for my boyfriend but it’s hard cause I really don’t know how to cook. 🥲 Help me out here. I’ve made spaghetti, concha soup (Mexican soup) mainly things with noodles. Help help help

Meatloaf is super easy. A package of ground beef, some minced onion, some garlic, parsley, an egg, breadcrumbs, either thyme or oregano, some of any type of bbq sauce, a little salt and pepper, and some cheese (parmesan, shredded, sometimes I just put 2 slices of swiss along the middle) then mix it all together, pop it in the over at 350 for an hour OR if you're strapped for time, put them in muffin tons and they cook in 15 mins. A good side is slicing russet potatoes into nice thick fries, put on a light coating of oil and sprinkle on seasoning salt. Bake with your meatloaf for about 45cmins until fork-tender. SO good

This is a super easy and delicious recipe! Even my 2 year old loves it! Instead of fixing in a 13x9 pan, I fix it in 2 8x8 pans so I can freeze one. This way you get 2 meals out of it. You will also have leftovers each time.

Do you have a grill? A gas grill is easy to use and great for cooking chicken burgers and steak. All you do is marinate the meat and put it on the grill, flip once and cook till preferred doneness. You can serve with salad from a bag and do great.

Stuffed red peppers are super easy. This is how I do it, but I’m sure there are other ways/recipes online:
Heat nonreactive pan to medium/high. Add some olive oil. Sauté half an onion until translucent. Add a package of ground turkey (or beef if you prefer) and brown. Add salt, pepper and (lots of) adobo seasoning to taste. Add a couple of crushed garlic cloves. Drain 1/2 the juice from a can of crushed tomatoes and rest of the can to pan. Cook until most of the juice is absorbed then reduce heat to med/low. Add a can of drained black or kidney beans, a cup of shredded cheese and a half a cup of either bread crumbs or crushed up crackers. Cook until combined. Preheat over to 350. Cut large red peppers in half and remove the seeds. Place in a greased pan. Fill with the meat mixture and sprinkle with cheese. Cook 30-ish minutes.
You can also cook the meat the day before and then just reheat and assemble.

Do ensalada it’s really easy. Boil chicken, shred it. Boil pasta and mix it with Mayo & sour cream. Add a mix of vegetables can, pineapple. Cut up ham & jalapeños. Mix it all together, add seasoning garlic salt, chicken bouillon, black pepper etc. serve cold with tostadas! It’s just a gist but you can look it up on yt
