Help! Finally eating 1200 calories + exercising 5+ a week, but I'm still gaining weight

I've been seeing a personal trainer, and he suggested that my caloric needs are not being met. He stated that I need to be eating at least 1200 calories for a healthy weight loss diet. Since than, I've been making sure to eat extremely healthy. Sure, I may have had 1 serving of Brewers Samoa ice cream.. ( 1/2 cup on two different occasions. 140 calories ) but other than that I've been eating rather healthy & I increased my intake of food so that I would meet my goal. However I have been unable to meet my goal of 1200 at times (with an exception of yesterday) I have cut out most carbohydrates (except for when I made salmon wraps on two or three occasions.. I used medium sized flour tortillas) eat lean meat, and mixed greens for my meal. When I was first weighed in (left picture) I weighed 143, the middle picture I weighed 144, and the last photo on the right which was taken today I weighed 148. As I am feeling more energetic now, I feel as if I am gaining more weight, although I have been going to the gym, doing 30 to 1 hour of cardio, as well as weight training and abdominal exercises. I am also on my 4th day of my menstrual cycle. Is this normal? I know it's only been a week, but this is scaring me. Compared to my old vigorous workouts paired with my diet of only eating when I felt hungry and stopping when I was content rather than being full.. I feel as if I am getting heavier 😭😭😭
