If it's not pasteurized that literally means they milked the cow on their own and used it. If it's sold in the U.S. it HAS to be pasteurized to follow health regulations unless very clearly labeled.

Depends on the restaurant. One of the Mexican ones by me it is not pasteurized. You have to ask. Don't assume because u are in the USA that it is.
