This meal will make you look like a Chef! 🍴

I love cooking but I'm still learning to cook but I wanted to share this EASY and super healthy recipe with you ladies because it's so damn good. And my SO thought I was a damn chef for the night! You can make it vegan/vegetarian or add meat. Before I state the ingredients I'll let you know that 1 spaghetti squash will feed 2-3 people and 2 spaghetti squashes will feed 4-6 people.

Ingredients:

1 spaghetti squash

1 zucchini

1 or 2 large carrots

1 red or orange bell pepper

2/3 cup of spinach (chopped)

Basil pesto (you should find that in the spaghetti sauce aisle)

If you like meat you can add one chicken breast chopped. (I didn't add meat)

1 cup of shredded cheddar cheese (if vegan you don't have to use cheese)

Olive oil

Salt to taste

Directions:

1. Preheat oven to 400°

2. Cut the spaghetti squash in half long ways (hotdog style). Scoop the seeds out like you would a pumpkin. Drizzle olive oil onto the squash and bake just the squash for 45 minutes.

Since it takes 45 minutes to cook I had time to do the dishes and also start on the recipe for the dish that goes inside the spaghetti squash.

3. Chop the zucchini, carrots, pepper, and spinach up. Place them in a skillet style pan on medium heat, drizzle with olive oil and cook for 10-15 minutes. Before taking pan off the heat add 1 cup of cheese and stir. Then add the basil pesto and stir. I don't give an amount for the basil pesto because it's so flavorful but I suggest you add 3-4 spoon fulls. Then add salt to taste.

4. After spaghetti squash has cooked 45 minutes take it out of the oven (if it is holding water just drain it in the sink)

Take a fork to the squash and pull apart the middle and it will then look like tiny spaghetti pieces.

5. Add the contents from the pan into the two halves of squash.

6. Sprinkle some cheese on top

7. Stick it back into the oven for 20 minutes

8. After taking it out of the oven you can stir the squash and other ingredients together.

I made cheesy garlic bread to go with it and it was amazing. This is one of the easiest meals I've ever made and it was super healthy to eat! Despite all the steps it was so easy. Let me know if any of you ladies try it!! Btw, if there's any other veggies you like you can also add those too.
