Gestational Diabetes Diet Recipe Suggestions???

Just found out today that I have gestational diabetes... any suggestions for cheap, easy and delicious meals that are diabetes diet approved? I'm basically a beginner cook that has no experience and lives off of pasta, quesadillas, and boxed dinners. We are a little tight on money right now so recipes for budgets are appreciated. I'm a big foodie with no allergies and am going to struggle with this so please throw a recipe or two!

I had gestational diabetes when I was pregnant with my 1st. I found that eating 2 servings of protein (one serving is 7 grams) to 1 serving of carbs (one serving of carbs is 15 grams) kept my blood sugar in check. You're supposed to be at 120 or under after 1 hour according to the endocrinologist I saw. Try those ratios and test your blood and see if it works for you.
