What else to do at 10:30 am on a Sunday

So I’m meal prepping for my week as it makes more sense than having to buy lunch everyday!

Here’s the start of pancetta pasta which is super easy to make.

Ingredients:

Penne pasta

Pancetta/ smoked bacon lardons

Garlic

Plum tinned tomatoes

Salt

Pepper

Chilli flakes

I’ve added spinach just to be healthy but you can top it off with basil and Parmesan!

Next I’m making roasted vegetables, cous cous with roast chicken!

I’ll post an update when I’ve made the pasta!

Vegetables have gone into roasting

Just waiting on them to finish and then I’ll add them to the cous cous and chicken!
