Easy and yummy recipe!

Quinoa

2 cups of water for 1 cup of dry quinoa

I add salt, pepper and paprika to it

Bring to a boil, cover, and bring down to a simmer for 10 - 14 min

Beans

I start with olive oil and cooking the onions, peppers, and tomatoes, cook them until you desire, then add spinach and your choice of beans, I used a can of pinto beans, add spices, I used garlic powder, salt, pepper, basil leaves, a little bit of thyme and some paprika and that's it! I had a side of avocado too and it was delicious!
